Recipes:  Abby's Baked "Cheesy Fish"

When Caleb's sister Abby was younger she refused to eat the fresh seafood off the boats......until Caleb and his brother Jake came up with this recipe......she never had a problem with fresh fish from there on!

 

Ingredients

 

  • Fresh striped bass fillets 

  • American cheese

  • Onion 

  • Garlic powder 

  • Ritz crackers

  • Stick of butter

  • Lemon 

  • Parmesean cheese grated

  • Salt and pepper

 

Cooking Instructions

 

  • Melt the butter in a sauté pan and then add a sleeve of crushed ritz crackers, mix with a half cup or so of grated parmesean cheese as well as a sprinkling of garlic powder.

  • Place the fish fillets in a baking dish coated with olive oil

  • Squeeze lemon juice over fish and salt and pepper along with some garlic powder.

  • Place slices of American cheese on the fish (can omit for the less picky eater!)

  • Place a few onion slices on the cheese and then coat everything with the ritz cracker mixture

  • Place in the oven and bake until the middle of the fish fillet flakes easily with a fork - time depends on thickness

  • Remove from oven squeeze some extra lemon and serve.....hot sauce optional!
