Recipes: Tyson's Ceviche
Although striped bass is not often found on a sushi menu this way of creating a slightly cooked fish is fantastic! You can add whatever you would like to this recipe depending on your tastes!
Ingredients

Bass Filets

4-6 limes

Cilantro
-
1/2 Cup Red Onion

3 Cloves of Garlic

1 or 2 Jalapeno Peppers depending on your taste

Black Pepper to taste
Cooking Instructions

Slice the fish into small strips no larger than 1/2 inch wide and set aside

Juice the limes and place in a container. (Use enough limes so all the fish being used is covered.)

Dice red onion then add to lime juice

Dice jalapeno peppers then add to lime juice

Chop handful of cilantro then add to lime juice

Press garlic then add to lime juice

Add pepper to lime juice

Mix lime juice and ingredients then add fish

Let fish sit in juice mixture for approximately 6-8 hours or so stirring every once in awhile. The acidity of the lime juice will cook the fish. As it cooks it becomes white colored.

Enjoy straight from the bowl! (some like a side of soy with it)
