Macadamia Coconut Bass
This is a recipe that takes a little more prep work but well worth it! A little tropical feel to your next bass meal.
* Start by cutting fish into small enough piece to be breaded and cooked.
* Mix equal parts crushed macadamia nuts, coconut flakes and panko bread crumbs together and set aside.
* Mix a beaten egg with 1/2 cup or so of coconut milk.
* Cut in half and seed one jalapeno pepper. Roast it in the oven or air fryer until slightly charred. Once cooked remove and peel off the skin, chop and set aside.
* Using roughly 1 cup of coconut milk, add to a saucepan and simmer until reduced roughly half. Once reduced add coconut milk, roasted jalapeno and juice of 1 or 2 limes and a pinch of salt to a small blender. Blend until smooth.
* Dredge fish in coconut egg batter and then into macadamia panko mix. Be sure to cover fully and press firmly onto the fish.
* Cook in either the oven at 375 or air fry (our favorite) or regular frying.
* Once fish is cooked place on plate add some coconut jalapeno sauce on top and fresh mango salsa, a lime and enjoy!
